Egg Muffins
Need a quick breakfast or snack??? These egg muffins are super easy to prep for the week! I love these for a quick breakfast or mid morning snack (good source of protein & veggies)…my 10 year old loves these too…she thinks they’re mini omelets!
Ingredients:
- 12 eggs
- 1 cup of your favorite veggies finely chopped
- 1/2 onion finely chopped
- slat & pepper to taste
- 1/2 cup of shredded (optional)
Directions: Preheat oven to 375. Whisk eggs in a large bowl. Add in veggies and mix together. Spray muffin pan with a non stick spray. Evenly pour egg mixture into pan. Bake for 15 minutes!
*2 eggs = 1 serving
Chocolate Protein Shake
This shake is super easy to make and perfect for busy on the go moms!! I usually have this for breakfast during the school year season because my mornings are crazy. While I’m making the kiddos breakfast, packing their lunch and back packs, I can be sipping on this protein shake! It’s totally up to you which kind of protein you prefer to use…I personally love Shakeology. My favorite flavor is Chocolate vegan 😉 But you can use other brands or flavors.
Ingredients:
- 1 scoop chocolate protein powder
- 1/2 banana
- 1 cup almond milk or water
- 1T peanut butter (optional)
- handful of ice
Blend all ingredients & enjoy!!!
Blueberry Muffin
Makes 12
Ingredients:
-2 eggs
-2 bananas
-2 cups oats
-1 cup plain Greek Yogurt (I used vanilla)
-2 Tablespoons honey
-1/2 tsp baking soda
-1.5tsp baking powder
-pinch of salt
-1/2 cup blueberries
Preheat oven to 400 degrees. Spray muffin tin with non stick. Place all ingredients into blender (or leave out blueberries). Blend all ingredients together and evenly pour into muffin tin. Bake for 15mins…check with tooth pick! Enjoy!
*Option don’t blend in blueberries. Top with blueberries before baking*
