Turkey Chili
This chili recipe is a family favorite, especially in the colder seasons! Yes, parents my kids approve of this meal (I know, crazy)!! This is a super simple recipe & perfect for busy families! I prefer to make my chili in a slow cooker but you can make an hour before dinner time in a big pot.
Ingredients:
• 1lb ground turkey (or other preferred ground meat)
• 1/2 onion finely chopped
• 1 bell pepper finely chopped (remove seeds!)
• chili seasoning packet (or if you’re fancy, make your own lol)
• 1 can tomato sauce
• 1 can stewed or petite tomatoes (drain)
• 1 large can hot chili beans (or 3 small cans)
• 2 cans red kidney beans (drained & rinsed)
• *if it seems too thick while cooking add a little bit of water
Directions:
Brown the ground turkey in a skillet, add onion & bell pepper. Once the turkey is cooked add in the chili seasoning with a little bit of water. Place the cooked turkey, onion & bell pepper into a slow cooker. Add in the tomato sauce, tomatoes and all beans. Stir it all together and cook on low for 5-6 hours.
My kids love to add shredded cheese, sour cream and crackers to their chili. If you’re looking to cut down on calories use low fat plain greek yogurt instead of sour cream…seriously you won’t know the difference!
Baked Lemon Garlic Salmon
Ingredients:
-1-2 Salmon filets (we get ours fresh from Costco and then portion it out)
-1/2 stick butter
-garlic powder (couple shakes, use your best judgement)
-1/2 fresh lemon
Directions: Preheat oven to 375. Whisk butter and garlic powder in a heated skillet pan. Once butter is melted squeeze the 1/2 fresh lemon and whisk a little more. Place salmon pieces on individual foil sheets. Pour lemon garlic sauce over salmon. Fold the foil into packets. Bake the salmon packets for 12-14 minutes. Serve with your favorite veggies!
This recipe is kid approved!! My son loves salmon, especially baked! Having the salmon in a foil packet will help prevent you from over cooking it or making it dry. The salmon turns out super tender! Enjoy!!
Chicken Noodle Soup
My whole family loves this chicken noodle soup recipe!! Yes, I said whole family…this is definitely a win for my kiddos! It’s super easy to make. Simply dump all the ingredients in a crockpot and let it cook for 6-8 hours! Perfect for busy families & this is a great freezer meal.
Ingredients:
4 chicken breasts (frozen works too!)
2-3md carrots peeled & chopped
2-3 celery stalks chopped
1 onion chopped
2tsp dill
3/4tsp thyme
1/4tsp pepper
7 cups chicken broth
3/4 package no yolk noodles (or your favorite type of noodles)
Directions: add all ingredients into crockpot. Cook on low for 6-8 hours. 30mins before serving add in uncooked pasta into crockpot. Let the pasta cook in crockpot. Enjoy!
Unstuffed Peppers
Super simple recipe that is easy to make and your kids will love!! Seriously, my kids loved it and went back for seconds!! (#momwin) I’ve tried making stuffed peppers but the peppers usually turn out undercooked & that doesn’t taste good. This is an easier recipe and the peppers are tender! Again, so good and the whole family liked it!
Ingredients:
-1lb ground turkey
-2 or 3 bell peppers (I used 1 yellow & 1 red) chopped
-1 onion chopped
-3/4 jar spaghetti sauce or 1 can diced tomatoes
-garlic salt & pepper
-shredded cheese
-2 cups cooked rice (or quinoa)
Directions: Brown turkey and start cooking rice. While the turkey is cooking, dice peppers and onion and season the ground turkey. Once turkey is cooked, add veggies, cover & simmer until veggies are cooked.
How to make Spaghetti Squash
This is seriously the easiest spaghetti squash recipe you’ll ever make!! And it’s Kid Approved!! If you’re a pasta lover but want to cut back on carbs, then try out this recipe! It tastes so good and you’re also getting in a serving of vegetables!
First cut off the top of the Spaghetti Squash and then cut in half. After cutting in half, scoop out the seeds with a spoon…just like you would when you’re carving a pumpkin! Next, you’re going to drizzle EVOO (or vegetable oil) and rub all over to coat the squash. Season with Garlic salt or any other seasonings you like.
Place open halved squash face down and bake on a lined baking sheet….easier for clean up!
Bake at 425 for 30-40 minutes until it’s easy to pull apart with a fork. When done pull the squash with a fork and serve with your favorite sauce and meatballs!!
Meatloaf Muffins
Ok, so you all know I’m not so great at cooking & I love easy recipes…this one is super easy! This is the easiest and tastiest meatloaf recipe. I use to make it in a loaf pan but it would either not cook long enough or be too dry….I found a solution, put it in a muffin tin! And yes this recipe is also KID APPROVED!!!
Ingredients:
-1lb ground Turkey
-2tsp Worcestershire sauce
-1 egg
-1/2 onion finely chopped
-1/2 bell pepper, finely chopped (red or yellow)
-3 oz shredded cheese
Directions: Preheat oven to 375, spray muffin tin with non stick spray. Mix all ingredients together in a bowl. Divide evenly in the muffin tin. Top with BBQ sauce or your favorite sauce. Bake for 23-25 mins.
Makes 12 muffins…serving size is 2
Crockpot Chicken Fajitas
Ingredients:
-1lb chicken breasts
-1.5tsp chili powder
-1tsp cumin
-1/2tsp salt
-1/4tsp black pepper
-4-5 bell peppers sliced
-1 onion sliced
*if you don’t have these seasons, simply use a taco seasoning packet
Directions: Place all ingredients into a crockpot. Cook on high for 4-5 hours. Shred chicken before serving. No need to any liquid to the crockpot. The juices from the peppers & onion will do the trick!
Easy Sweet Potatoes
These are thee best sweet potatoes I’ve ever tasted….and super easy to make too!! This is a perfect side for any dinner, no need to wait for the holidays to have Sweet potatoes! This recipe can also work for making baby food.
Ingredients:
-3 sweet potatoes, peeled & cubed
-EVOO
-Garlic powder
-Cinnamon
Directions:
Preheat oven to 400…line a baking sheet with tin foil. Spread out the cubed sweet potatoes, drizzle EVOO and sprinkle with garlic powder & cinnamon. Mix together to get them all well coated. Bake for 30-35 mins!! So easy, right?!?! And no dishes because the sheet was lined!
You can also prep these on a Sunday night to use for your meals during the week!
